$1.35 per serving!



Chicken and Pepper Egg Rolls
1 lb boneless skinless chicken breast, sliced into thin strips
2 large bell peppers, any color, sliced into strips
1 large onions, sliced into strips
1 clove garlic, minced
1 tsp grated ginger
2 Tbsp soy sauce
Egg Roll Wrappers
2 Tbsp oil
Non-Stick Cooking Spray
Pour 2 Tbsp oil into pan and cook chicken through.  Add pepper and onion, cook 5 minutes, stirring regularly.  Add soy sauce, garlic, and ginger, stir well.  Cook until all liquid has evaporated.  Remove from heat and cool for at least 15 minutes...**you can't put hot ingredients into egg wrappers.**
Get a small bowl of water and have handy, for securing egg rolls as they are wrapped.  Fill one wrapper with chicken mixture, wrap and brush water on ends to hold wrapper closed.  Repeat until all chicken mixture and wrappers are gone.  Preheat oven to 350 degrees and bake for 10-15 minutes or until golden brown.
