Chicken Parmesan Adaptation

If you are Italian, you might say, Pollo Parmigiano!.  Tonight I have made a variation of this popular Italian dish...I call it Parmesan Chicken-Balls Over Angel Hair Pasta.  hehehe...that name makes me giggle every time I say it.
Pasta~generic name for thin pieces of hardened, unleavened dough that are molded into various shapes and boiled, not baked. Pasta is commonly associated with Italian cuisine.  There are approximately 350 different shapes of pasta, I have chosen to use angel hair pasta, this is a thinner/finer version of regular spaghetti, it is mostly used with light and delicate sauces or with seasonal fresh vegetables.  I have used plenty of fresh ingredients in my sauce including fresh green peppers, onions, basil, oregano, and garlic.  Hope you like my changes.
Parmesan Chicken-Balls Over Angel Hair Pasta,  hehehe
1 lb ground chicken, white meat only\
1 cup Italian bread crumbs
1/2 cup + 2 Tbsp Parmesan Cheese, grated
1 medium onion, sauteed and diced (save 2 Tbsp for meatballs)
1 green pepper, sauteed and diced
2 jars classic spaghetti sauce
2 boxes angel hair pasta, boiled to be al dente
2 cloves garlic, minced
2 bay leaves
2 Tbsp sweet basil
1-1/2 tsp oregano
1/4 tsp thyme
1/4 Tbsp red pepper flakes
salt and pepper, to taste
milk, for meatball wash
Parmesan cheese, for garnish
In a large bowl mix together the chicken, 2 Tbsp diced onion, and 2 Tbsp Parmesan cheese, form mixture into meatballs then dip in milk, now roll in the bread crumbs and place on baking sheet.  Place in preheated 350 degree oven for 1 hour, rolling around 2x during baking.  While meatballs are baking, make the sauce.  Pour spaghetti sauce, onion, green pepper, spices, bay leaves, and remaining Parmesan cheese in large pot and bring to a boil, once boiling, turn heat down to simmer till meatballs are done.  Now time to plate, enjoy with a croissant, or garlic roll.  Enjoy!
Total Cost:  $7.47, this will feed about 20 people, according to your serving size...this is a great recipe for a party!  Have fun!
**Tip of the Day~Buy your spices in bulk!  Go to Sam's Club or your local whole foods store, but if there isn't anyone selling spices in bulk near you, check the internet. You can usually get 1-2 oz of a spice for a tenth of what you pay for those cute little glass jars in the grocery store.  Happy shopping!**
