In English: "I want a Mexican fiesta!" I'm sure that by now, you know it's Mexican night at the Maxwell house; and I LOVE MEXICAN FOOD!! Not many people know, but traditional Mexican food is low in fat and calories and is very rich in vitamins and minerals. It is very good for you, which is why you should explore the traditional Mexican cuisine, not the Americanized Tex-Mex version that's so famous, (and delicious), but is very high in fat and calories. The following recipe is my take on the Enchilada.
Mandy's Enchilada:
1 large can tomato sauce
1/4 tsp garlic powder
2 tsp chili powder
1/4 tsp cumin
dash of hot sauce
1 lb ground sausage
wheat tortillas
1 can refried beans
1 small can green chilies
1 pack taco seasoning
3/4 cup water
1 cup cheese
more cheese, sour cream, and chili powder for garnish
Combine first four ingredients in medium sauce pan and heat to boiling, then reduce heat to simmer. While sauce is simmering, brown sausage, now add water and taco seasoning, cook over medium heat till bubbly, then remove from heat to thicken. Heat refried beans with 1/4 cup cheese in microwave till hot. Place aluminum foil wrapped tortillas into a preheated 400 degree oven for 10 minutes, or till heated and softened through. When all is done, add the beans, meat, and some cheese into the tortilla and fold closed. Now pour a bit of the sauce over the enchilada, then sprinkle with cheese and add a dollop of sour cream, finally, finish with a light sprinkle of chili powder and "Voila"!! Supper is done! Now sit down with the family and enjoy my very cheap take on a popular Mexican dish.
Total Cost: $7.32, this would've been much more if I would have purchased the sauce already made...it would've caused heartburn too. haha, Jeremy's thanking me for this! :)
**Tip of the Day~Stock-up during Sales!! Many items have long expiration dates, such as beans, rice, and canned goods. These items will last 6 months to over a year, so when they go on sale, stock up!! Happy shopping!!**
