Tonight I cooked for 5 family members: we had Homemade Salmon Patties with Au Gratin Potatoes, Great Northern Beans, and Garlic Cheese Rolls...this is a mixture of homemade and semi-homemade dishes, it only took me about 15 min prep and 30 min cook time.
Salmon Patties:
2 cans salmon, flaked, (I always remove bones and skin)
1/2 cup flour
1/2 cup corn meal
2 eggs, beaten
Kosher salt and cracked pepper, to taste
ketchup, optional
Preheat griddle on #4 and drizzle with olive oil. Mix all ingredients well, then form into 3 inch patties. Place patties onto the griddle and cook about 5 minutes on each side, or till brown, and done. Serve with ketchup for dipping.
Au Graten Potatoes and Garlic Cheese Rolls:
5 potatoes, steamed,(but not done), and sliced
2 cups cheddar cheese, shredded
1 cup milk
1/2 stick of butter, melted
kosher salt and cracked pepper, to taste
chives, sliced
spray of butter Pam, 1 Tbsp Parmesian cheese and 1 tsp garlic powder
Preheat oven to 350 degrees. Place potatoes into 8x8 glass pan, sprinkle with cheddar cheese, save enough to cover top, pour milk and butter onto potatoes and add salt and pepper. Bake for 20 minutes, or until starting to brown, while the potatoes are baking spray rolls with cooking spray, sprinkle with parm cheese and garlic. Add leftover cheese to top of potatoes, place back in oven along with rolls and bake till brown. Garnish potatoes with chives.
Heat Great Northern Beans in Microwave safe bowl till hot all the way through, (about 5 minutes), may bubble over so keep a close watch over them!!! Call the family to the table and enjoy!
Total Cost: $8, and Jeremy says this is an "expensive" meal!!!
**Todays Money Saving Advice**I always buy potatoes by the bag...a 10 lb bag usually runs about $4.99, and this sucker will feed the whole family at least 4 times, while a box of Au Gratin Potatoes costs $2.60 each, and with a family my size I would have to buy 2 boxes...that's over $5 on a side dish, for only 1 meal!!!!
