When In Doubt, Throw It Out!

Can you guess what we are having for supper tonight?  You got it:  LEFTOVERS!!!!  Now let me tell you, there is no better way for me to win my husbands complete and undying admiration, but by using those three little words he loves so much, "it was free"!!!!  hahaha  Remember the following tips to insure safe leftover eating.  Leftover food should be kept in the refrigerator for 7 days or less, (if you need to, write the date on the lid or container).  And like the title tonight, always remember:  "When in doubt, throw it out!".  Seriously, if your food looks funny, smells funny or feels funny-THROW IT OUT!!! No need in risking your families safety over a cheap husband.  :)   If you have been following my blog, you already now we had enchiladas and spaghetti this week, and we are giving them a 'redo'.  I made lots more this week, but I either froze it for a quick meal when I am in a pinch or sent it with my husband for his work lunch...and yes, he is THAT cheap, he refuses to buy lunch, so I make it and send it for him each day.  Getting back to the menu at hand, I made the day old spaghetti into a yummy Spaghetti Pie and with Wednesday's leftover enchilada ingredients, I made a scrumptious appetizer.
Spaghetti Pie:
4 cups leftover spaghetti
2 tbsp. butter, melted
2 eggs, beaten
1/3 c. Parmesan, grated
1 c. cottage cheese
2 cans Italian-style Tomato sauce
Mozzarella Cheese, shredded
Mix all ingredients, (except the mozzarella), in a large bowl.  Pour mixture into 10 inch buttered pie plate, push the mixture up on the sides and make a well in center. Add 1 cup cottage cheese and 2 cups spaghetti sauce. Top with 1 cup mozzarella cheese. Bake in a preheated 350 degrees oven  for 25-30 minutes. Enjoy!
Enchilada Dip
1 package cream cheese

1 small container sour cream
leftover refried beans, at least 1 cup
leftover enchilada sauce, at least 2 cups
Cheddar/Jack Cheese, shredded
Tortilla Chips
Mix together and spread in pan. Top with cheese. Bake in preheated oven at 375 degrees for 30-35 minutes. Serve with tortilla chips.  Enjoy!
Total Cost:  $5...but if you really want to get technical, I was being extremely high on this since most of the extra ingredients were already in my pantry, so in reality it cost a big fat ZERO to make this meal! Check out the contents of your pantry before you make a meal, you may have a gold mine right in front of you! 
 
**Tip of the Day~ Always get rain checks when sale items are out of stock...you might think, "what! no way am I asking for that", but you will be glad you did, every grocery store offers rain checks and are more than happy to give them to you at the checkout. Happy Shopping!**
