Roast Beast

Roast Beast~this is what my daughter calls roast beef...or chuck roast, to be specific.  Beef is a good source of minerals such as zinc, selenium, phosphorus, iron, and B vitamins.  Red meat is the most significant dietary source of carnitine and, like any other meat (pork, fish, veal, lamb etc.), is a source of creatine.  And it's oh so yummy!!!  We had the roast with sides of steamed potatoes and carrots, rice and onions with gravy and garlic parmesian croissants.  I steamed the potatoes and carrots sprinkled with salt and pepper for 60 minutes in my nifty steamer, I use this sucker more than anything else in my kitchen, (there is a picture above).  The croissants were store bought, but I spruced them up by sprinkling garlic powder and freshly shredded Parmesan cheese on them and baking them as directed on packaging.  As for the roast and rice and gravy...read on.  Enjoy!  :)
Take 1 chuck roast, stuff it with 3 cloves of garlic and salt and pepper to taste, brown in a screaming hot frying pan, on all sides, with olive oil.  Preheat oven to 375 degrees.  In a large 13 x 9 inch roasting pan, add 1 cup long grain rice and 2.5 cups water with a sliced onion.  Lay the roast on top of the rice and onion and cover tightly with aluminum foil.  Bake 1 hour or until the rice is done.  When the roast is done, take the pan used to brown the roast and turn up heat.  Add milk and flour along with salt and pepper to taste and make a gravy to serve over the rice.  Put all this on a plate, neatly!!  And Enjoy!!!!

Total Cost-$8...with lots left over for school lunches and work!!

**Todays Tip~Purchase rice in the bag instead of the box, it is cheaper and you get lots more.  Happy Shopping!!!**
