Baby, It's Cold Outside

What do you think of first, (in terms of supper), when the forecast calls for freezing weather?  I think of relaxing by a warm crackling fire with a bowl of soup...and my cheap husband, of course! 
Welcome you most wonderful family in from the cold with one of these soups.  Each one calls for a few of the everyday ingredients and takes only a few minutes to make.  You can be ladling up a steaming bowl before your family gets their snow boots off! 

First I'll start with a Mexican flair...
Tortilla Soup
1- 10.5 oz can condensed chicken with rice soup, undiluted
1 1/3 cups water
1 cup salsa
1 cup canned pinto beans, rinsed and drained
1 cup canned black beans,  rinsed and drained
1 cup frozen corn
1 cup frozen diced cooked chicken
1 tsp cumin
Crushed tortilla chips
Shredded cheddar cheese and sour cream
In a large saucepan, combine the first eight ingredients.  Cook over medium-high heat for 5-7 minutes or until heated through.  Serve with tortilla chips, cheddar cheese and sour cream.  Makes 5 servings.

Next up, my personal favorite...POTATO!!!                                  
Zesty Potato Cheese Soup
3-10.5 oz cans condensed cream of potato soup, undiluted
2 12 oz cans evaporated milk
3/4 cup shredded cheddar cheese
3/4 cup pepper Jack cheese
6 slices fully cooked bacon, crumbled
In a large saucepan, combine the potato soup and milk.  Cook over medium heat for 5-7 minutes or until heated through.  Ladle into serving bowls and sprinkle with cheeses and bacon.  Makes 6 servings.

Finally I end our soup adventure with a beefy soup in a hurry!
Beef Soup...In A Hurry
1-24 oz can beef stew
1-14 oz can stewed tomatoes, cut up
1-10 oz can condensed vegetable beef soup
1-8 oz can whole kernel corn, drained
1/8 tsp hot pepper sauce (like Texas Pete)
Combine all ingredients in a microwave-safe bowl.  Cover and microwave on high for 2-3 minutes or until heated through, stirring only once.  Makes 6 servings.

All of these soups can be made for as little as $6, and as quick as 10 minutes!!  Enjoy!
