Christmas Leftovers!

Ok, who out there doesn't have some leftover turkey from either Thanksgiving or Christmas?  Hopefully you froze the leftover turkey from Thanksgiving...otherwise, THROW IT OUT!!!  haha  Well, below I have a perfect solution for you and those extra slices of bird, and gravy!

Turkey and Gravy Baskets

1 package puff pastry (crescent rolls work perfectly)
2 cups frozen brocolli florets
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
4 tsp extra virgin olive oil
leftover turkey, chopped into bite size pieces
1/2 cup leftover turkey gravy
Take the puff pastry triangles and wrap each one around itself, making what looks like a birdnest.  Bake as directed until golden brown.  Meanwhile, in a large skillet, saute the brocolli, onion, and sweet pepper in oil for 5 minutes, or until crisp-tender.  Add turkey and gravy to skillet vegetables and heat through.  Serve in pastry nests. 

This recipe only costs about $5 to make for a family of 6...and that's if you go all La-Ti-Da with the brandnames!  Enjoy!
