Breakfast for Supper

Tonight, I made breakfast for supper...the family LOVES it when I do this, especially since I don't get up in time to make breakfast in the morning!  LOL!  I go all out for supper though, we have breakfast casserole, turkey bacon, country ham, cheesy garlic grits, and homemade hot cocoa.  I'm sure you already know how to fry bacon and country ham, so I will omit those from the recipes below. 
Although...**I like to use a George Foreman instead of the traditional frying because it's much more healthy and keeps the meats from curling up on itself too!  :-)  This makes me very happy.**

Breakfast Casserole
6 slices bread, I use wheat
1 1/2 large containers egg beaters, or any other egg substitute you like
1/4 cup milk
1/2 cup cheddar cheese
1/2 cup Monterrey Jack cheese
1 lb hot pork sausage, browned
salt, pepper, and garlic powder, to taste
In a greased 13x9 glass casserole pan, line bread on the bottom.  Pour milk and eggs over the bread, then sprinkle with sausage and cheese and spices.  Bake in a 350 degree oven for 30 minutes or until lightly browned and set in the center. 

Cheesy Garlic Grits
2 cups quick grits
4 1/2 cups water
1 cup cheddar cheese
1 Tbsp garlic
salt and pepper to taste
Combine the grits and water and bring to a boil.  Turn heat to simmer and add cheese and spices,  Simmer for about 5 minutes or until all water is absorbed.  DO NOT OVER COOK!

Homemade Hot Cocoa
1 cup granulated sugar
2/3 cup baking cocoa
8 cups milk
1 tsp vanilla extract 

miniature marshmallows
Combine sugar and cocoa in medium saucepan; stir. Gradually stir in 2/3 cup milk to make a smooth paste; slowly stir in remaining milk.  Warm over medium heat, stirring constantly, until hot (do not boil). Remove from heat; stir in vanilla extract.  Top with marshmallows before serving.  Makes 8 servings.

This entire meal only cost $10...and there are plenty of leftovers for tomorrow morning!  YAY!  Enjoy!
