I know every parent out there has dealt with this sort of thing, whether it's a cross country meet, a football game, or FFA animal show...we all need to get our butts on the move, but we still have to feed our families. I came up with this a few years back when my son and daughters decided to be Rec ball stars...in three different sports! In other words, quick meals were my best friend, but sandwiches get old real quick and fast food is unhealthy and WAY to expensive. The following recipe is my adaptation to chicken and dressing with all the great taste, without all the slaving over a hot oven...hope you enjoy it as much as our family has! :)
Chicken and Dressing
2 large cans white meat chicken
1 bag frozen mixed vegetables
1 large can Cream or Chicken Soup
1 bag cornbread dressing mix
1 cup water
2 Tbsp butter, melted
Mix everything together and pour into a casserole dish and cook at 400 degrees for 20 minutes or till golden brown.
Yep folks, it's just that simple...and yummy! I always add a fresh salad as a side. This meal usually runs us about $10, but there's always leftovers for school and work lunches; and you can always go cheaper, according to the product names you choose to use. ENJOY!
