FINALLY! Time for the First Soup of the Season!

I know I made this in a post way back in November or December of last year, but this time I am doing the Crock Pot version!  It's so good, you'll want to slap your Mama!  haha, just kidding, please don't slap your Mother.  


Chicken Tortilla Soup
3 boneless skinless chicken breast, cooked and cubed
4 cups chicken broth
1 can whole kernel corn
1-1/2 cups dried black beans
1 large can whole tomatoes
1 small can tomato paste
1 onion, chopped
2 garlic cloves, chopped
3 Tbsp chili powder
2 Tbsp cumin
6 whole corn tortillas, sliced into 2-3 inch strips
Pour all ingredients, except the tortillas, into a Crock pot and cook on medium heat for 6 hours.  10 minutes before serving add the tortilla strips.  Garnish with cheddar cheese, salsa, avocado, or sour cream, all taste phenomenal with this soup.


This same recipe can be made into a quick fix as well.  Just add 2 cans chicken and 2 cans black beans, drained.  Both ways can be made for under $5...maybe a little more with the canned chicken.  ENJOY!
